2020 Castaño Santa

Each grape variety, Monastrell and Tintorera are harvested on its best ripe moment, selecting them manually on the vineyard in cases of 15 kg. Back in the winery, the best bunches are selected over the sorting table and subsequently destemmed with no pressing on a small destemmer. Handmade pumping over in small 6.000 and 8.000 liter stainless steel vats. A control average temperature between 24º - 28º fermentation with the native yeast and maceration with the skins during ten days. Soft pneumatic pressing. Natural malolactic fermentation. 14 months in new French and American oak barrels.
Deep cherry red colour of high intensity. On the nose it exhibits ripe fruit aromas (blackberries and blueberries) with balsamic and spices notes on a smoked background. Complex on the palate, juicy fruit along with a sweet and elegant tannin. Well balanced, fresh and a long aftertaste.
