Campari var stofnað af Gaspare Campari og syni hans Davide árið 1860 og hefur hinni leynilegu uppskrift ekki verið breytt síðan. Það var svo fyrir meira en einni öld síðan þegar Campari & Soda var fyrst borinn fram á kokteilbarnum Camparino in Galleria í Milano. Rauður er litur ástarinnar og líklega er einmitt enginn kokteildrykkur eins elskaður og Campari, reyndar svo að hann er líklega oftast drukkinn með sódavatni.
